I omitted the rum just because i had none (only a tiny bottle of vodka). 5 mini loaf pans, 37 min cooking time. I substituted the brown sugar with coconut sugar and butter with coconut oil. This is the best banana bread i've made till date. It's a bread recipe that doesn't use yeast as leavening. This recipe works really well for me. I did make a few subs, based on what i had on hand.
